Okay, so, on a slightly different theme...

I now have one month left before the baby comes, or possibly less. Since I am going to be in surgical recovery mode for a few weeks, and my husband's culinary skills are, um, limited, we are going to be in survival mode as regards food. I expect lots of sandwiches for lunches, and similar low-level options.

I desperately want hot foods for dinners, though, and that means either takeout (which gets expensive fast) or leftovers. So for the next few weeks, I am in cooking mode which creates maximum leftovers.

Unfortunately, very little of my standard cooking repertoire freezes well. I'll make a giant thing of baked ziti, a lasagna, and a roast or two which can be turned into meat+gravy on egg noodles, but I'm anxious for more variety. Hence this post.

Does anyone have any good, not too complex recipes which freeze well for leftovers? The leftover preparation process should be no more complicated than "cook this in pan/oven/microwave for X time at Y heat." Casseroles, packaged homemade TV dinners, stews, anything at all would be great, as long as it will stay good in the freezer for 6-8 weeks.

Thanks in advance for any advice.

Also: anyone read or know of any LJ communities where I might be able to post the same question and get more answers?
